Brazilian Tapioca Flour Crepes

These Brazilian crepes made are a popular street food made with tapioca flour, a great substitute to traditional crepes for those who are gluten intolerant, dairy and lactose-free! Next good thing is they are easy to cook, and you can have them sweet or savoury. It is really easy to make, and you will only need tapioca flour and water, plus any toppings of your liking.

How to do it:

  1. Wash ¼ cup of tapioca starch with water and sift it through a fine sieve to produce a snow-like powder.
  2. Heat a medium pan over medium heat until the surface is warmed up.
  3. Add in the tapioca flour in the pan to form an even and thin spread-out layer.
  4. Cook for a minute and add the toppings of your choice. You will start to see how the tapioca flour begins to stick together and it will become a solid crepe-like layer.
  5. After adding your toppings, you can fold it like a crepe with a spatula and let it cook for a couple of seconds before transferring it onto a plate.
  6. Enjoy your tapioca crepe!

Some ideas for your toppings:

  • Smoked salmon and avocado
  • Hummus and spinach
  • Nut butter with banana
  • Coconut yogurt with berries
